1 Heat the Liquid Coconut oil in a large saucepan over medium heat. Add onion and cook for 3 minutes or until softened. Reduce heat to low, add garlic and spices and stir for 1 minute or until fragrant. Stir in tomato paste and lemon juice and cook for 1 minute. Add coconut cream and season.
2 Increase heat to medium-high and bring sauce to a simmer. Add chicken, cauliflower and broccolini, stirring well to coat in sauce. Cover pan and cook for 20 minutes, stirring occasionally, or until chicken is cooked through and the sauce has thickened.
3 Meanwhile, add Ghee Butter and coriander to rice and toss through with a fork to separate grains. Heat naan as per packet instructions.
4 Garnish the curry with almonds and extra coriander, and serve with rice, naan and lemon wedges.
