Gluten-Free Muffin with Brown Rice flour



  • Preheat oven to 180°C. Line muffin tin with liners.
  • In a bowl, combine flour, sugar/sugar replacement, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil, and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened.
  • Fill cups 2/3rd full. Bake for 20 to 25 minutes or until a toothpick inserted in a muffin comes out clean.
  • Cool 2 minutes before removing from pan.
  • Serve warm.
