Serves: Makes 1 standard round cake 


  • Preheat oven 190°C bake. 
  • Grease and line a standard circle cake tin. 
  • Add the butter, sugars and coconut oil to a small bowl and beat with an electric beater until combined. 
  • Add the eggs, beating well after each one is added. 
  • Add the coconut flour and fold through until just combined. 
  • Add the cinnamon and apples and fold through until well combined. 
  • Pour the cake batter into the cake tin, pressing the mixture down to fill any gaps. This is not your traditional wet cake mixture. 
  • Bake for 40-50 minutes or until a knife is removed clean. 
  • Allow the cake to cool for 10 minutes in the tin before transferring to cool completely on a wire rack. 
  • Dust the cake with icing sugar to serve.
