Gluten Free Chocolate Chip Cookies with Lentil Flour


  • 1 ½ cups Coco Earth Lentil Flour
  • ½ cup Coco Earth Ghee butter
  • 2/3 cup sugar or equivalent sugar replacement
  • 1 egg beaten
  • 1 tsp vanilla extract
  • ¼ tsp baking powder
  • 1/8 tsp baking soda
  • 1/3 cup melted chocolate
  • ½ cup of chocolate chips


  1. Preheat oven to 180°C. Line a baking pan with a parchment paper.
  2. Add Ghee butter and sugar/sugar replacements to the bowl of stand mixer. Beat for ~3-4 mins (until fluffy/light). Add egg, vanilla and mix properly. Add slightly cooled (not hot) melted chocolate, stir it well.
  3. Now mix the lentil flour, baking soda, baking powder and mix them well. Add this dry mix slowly to the stand mixer and stir until combined well. Add chocolate chips.
  4. Take 1 tbsp-sized portions out, roll them into balls, press them slightly and place them into the oven for ~10-12 minutes.
  5. Cool in the pan for sometime, then cool on wire rack.
