Veggie Medley Fried Noodle

Who’s a fan of noodles? 😍 This VEGGIE MEDLEY FRIED NOODLE with carrots, celery, green beans, spinach and textured vegetable protein (to make the minced meat) using the bomb organic coconut amino sauce  and liquid coconut oil (which doesn’t turn solid in winter!!). Only takes 5 minutes to cut the veggies while soaking the brown rice noodles in hot water, and another 5 minutes to stir fry everything together 🌿 Super simple and yummy 😋 .
VEGGIE MEDLEY NOODLE STIR-FRY

Ingredients

VEGGIE MEDLEY NOODLE STIR-FRY

  • 1 tsp coconut liquid cooking oil
  • 1/4 onion, thinly sliced
  • Handful of green beans, roughly chopped
  • 1 small carrot, thinly sliced
  • 1 stalk celery, thinly sliced diagonally
  • 1 cup chopped spinach
  • 1/4 cup TVP, soak in 1/4 cup water for 5mins, drain and squeeze water out and marinate with 2 tsp coconut amino for 5-10mins (alternately you can use tofu instead)
  • 1 serving of noodles of choice, soaked in hot water if using rice noodles ( use brown rice noodles)

    Stir-fry sauce:
  • 1.5 tbsp coconut amino
  • 1 tsp toasted sesame oil
  • 1/2 tsp sweetener of choice
  • 1 tsp finely grated ginger
  • 1/2 tsp garlic powder
  • 1 tsp pink salt
  • 1 tsp tahini

Instructions

Heat oil in a pan and sauté onion till fragrant. Add in green beans and cook for 1 min, then add in carrot, celery, spinach, marinated TVP and cooked noodles. Drizzle stir-fry sauce and stir fry until everything is coated with the sauce.
