Ingredients
Pancakes (makes 3)

40g Coco Earth Oat Flour (or blended oats)

20g vegan vanilla protein powder

120ml water or milk

½ tsp baking powder
Lemon Coconut Cream

150g vanilla yoghurt (50g per layer)

1 tbsp lemon zest
Raspberry Compote
- 40g raspberries
- 1 tsp cornflour
- 1 tsp sweetener
Method
Pancakes
- Mix oat flour, protein powder, and liquid until smooth.
- Add baking powder with a splash of water and fold through.
- Let the batter rest for 10 mins.
- Cook in a lightly greased pan (¼ cup each), covered, until golden. Flip and cook briefly.
Lemon Coconut Cream
- Mix yoghurt, coconut flour, and lemon zest until thick and creamy.
- Raspberry Compote
- Microwave raspberries 40 sec.
- Stir in sweetener + cornflour.
- Microwave another 20 sec, stir, and let thicken 1 min.
Assemble
- Layer pancakes + cream in a 10cm springform pan (3 layers).
- Chill 20 mins.
- Remove, smooth edges, and top with raspberry compote + maple drizzle before serving.
