Ingredients

Pancakes (makes 3)

  • 40g Coco Earth Oat Flour (or blended oats)

  • 20g vegan vanilla protein powder

  • 120ml water or milk

  • ½ tsp baking powder

Lemon Coconut Cream

Raspberry Compote

  • 40g raspberries
  • 1 tsp cornflour
  • 1 tsp sweetener

 

Method

Pancakes

  1. Mix oat flour, protein powder, and liquid until smooth.
  2. Add baking powder with a splash of water and fold through.
  3. Let the batter rest for 10 mins.
  4. Cook in a lightly greased pan (¼ cup each), covered, until golden. Flip and cook briefly.

Lemon Coconut Cream

  1. Mix yoghurt, coconut flour, and lemon zest until thick and creamy.
  2. Raspberry Compote
  3. Microwave raspberries 40 sec.
  4. Stir in sweetener + cornflour.
  5. Microwave another 20 sec, stir, and let thicken 1 min.

Assemble

  1. Layer pancakes + cream in a 10cm springform pan (3 layers).
  2. Chill 20 mins.
  3. Remove, smooth edges, and top with raspberry compote + maple drizzle before serving.
