Ingredients

  • 1 ripe banana (100–110g)

  • 50g carrot (finely grated for smooth OR coarsely grated for chunky)

  • 1 egg

  • 30g Coco Earth Oat Flour or finely blended

  • 1 tsp baking powder

  • ½ tsp cinnamon

  • Optional: chopped pecans or walnuts

Topping (optional)

• 1/3 cup vanilla protein yoghurt or Greek

• 10g vanilla vegan protein powder

 

Method

  1. Preheat the oven to 180°C.

  2. Smooth version: Blend banana, finely grated carrot, egg, oat flour, and cinnamon until smooth. Fold through baking powder.

  3. Chunky version (shown): Mash banana with a fork, then add coarsely grated carrot and egg. Add oat flour, baking powder, and cinnamon, and mix until combined.

  4. Pour into a lined ramekin or baking dish.

  5. Top with nuts if using. Bake for ~20 minutes, until just set. Cool.

  6. Mix yoghurt and protein powder, then spread on top.
