Ingredients

1 ripe banana (100–110g)

50g carrot (finely grated for smooth OR coarsely grated for chunky)

1 egg

30g Coco Earth Oat Flour or finely blended

1 tsp baking powder

½ tsp cinnamon

Optional: chopped pecans or walnuts
Topping (optional)
• 1/3 cup vanilla protein yoghurt or Greek
• 10g vanilla vegan protein powder
Method

Preheat the oven to 180°C.

Smooth version: Blend banana, finely grated carrot, egg, oat flour, and cinnamon until smooth. Fold through baking powder.

Chunky version (shown): Mash banana with a fork, then add coarsely grated carrot and egg. Add oat flour, baking powder, and cinnamon, and mix until combined.

Pour into a lined ramekin or baking dish.

Top with nuts if using. Bake for ~20 minutes, until just set. Cool.

Mix yoghurt and protein powder, then spread on top.
