Ingredients
Pastry
- 30g Coco Earth Oat Flour
- 10g Coco Earth Organic Coconut Flour
- 1/2 tsp baking powder
- 1/4 cup (75g) 0.5% Greek yoghurt
Filling
- 1 Medjool date, chopped
- 1 tsp cinnamon

1 tbsp monk fruit caramel syrup
Serve: monk fruit icing sugar or any preferred and dollop of yoghurt and cinnamon.
Method

Mix all pastry ingredients with a silicon spatula until a soft dough forms.

Place onto baking paper lightly dusted with oat flour.

Cover with baking paper and roll into a rectangle to prevent sticking and keep the dough soft.

Mix cinnamon with syrup and spread onto the pastry, then add chopped dates (use soft dates or soak briefly and drain excess water).

Use the baking paper to roll tightly.

Brush with milk and bake at 180°C for ~12 minutes until golden (don’t overbake).
