Chocolate Mug Cake

Ingredients

  • 1 egg (separate yolk and white)

  • 3 tbsp Coco Earth Oat Flour (24g) (or finely blended oats)

  • 1 tbsp cacao

  • 1 tbsp sugar-free sweetener

  • 3 tbsp (40ml) vegan chocolate protein smoothie or preferred milk

  • 1 tsp vanilla extract

  • 1 tsp baking powder

PB Frosting

  • 1/4 cup vanilla oat yoghurt or preferred

  • 12g peanut butter powder

 

Method

  1. Whisk egg yolk, oat flour, cacao, sweetener, milk and vanilla until smooth.

  2. In a separate bowl, whisk egg white until fluffy.

  3. Fold egg white and baking powder into the batter.

  4. Pour into a greased mug or 10cm ramekin.

  5. Microwave in 30-second intervals (~1 minute total, 900W) until just set.

  6. Remove immediately to keep it soft and fluffy.

  7. Let cool slightly, then top with frosting and optional chocolate drizzle.
