Ingredients

1 egg (separate yolk and white)

3 tbsp Coco Earth Oat Flour (24g) (or finely blended oats)

1 tbsp cacao

1 tbsp sugar-free sweetener

3 tbsp (40ml) vegan chocolate protein smoothie or preferred milk

1 tsp vanilla extract
-
1 tsp baking powder
PB Frosting

1/4 cup vanilla oat yoghurt or preferred

12g peanut butter powder
Method

Whisk egg yolk, oat flour, cacao, sweetener, milk and vanilla until smooth.

In a separate bowl, whisk egg white until fluffy.

Fold egg white and baking powder into the batter.

Pour into a greased mug or 10cm ramekin.

Microwave in 30-second intervals (~1 minute total, 900W) until just set.

Remove immediately to keep it soft and fluffy.

Let cool slightly, then top with frosting and optional chocolate drizzle.
