Ingredients

Serves 2–3

Salad:

  • 1 cup Frisp Hearts of Palm

  • 1 cup baby spinach or arugula

  • ½ cup cucumber, thinly sliced

  • ¼ cup cherry tomatoes, halved

  • 2 tbsp fresh parsley, finely chopped

  • 2 tbsp fresh coriander, chopped

  • 1 tbsp fresh mint leaves, finely sliced

  • 2 tbsp toasted pine nuts or sliced almonds

  • 2 tbsp crumbled feta (optional)

Herb Lemon Dressing:

  • 2 tbsp Coco Earth Liquid Coconut oil

  • 1 tbsp fresh lemon juice

  • 1 tsp Dijon mustard

  • 1 small garlic clove, finely minced

  • Salt & freshly ground black pepper to taste

Instructions
  • Drain and rinse the canned Hearts of Palm. Wash and dry the greens and fresh herbs thoroughly. Slice cucumber and halve cherry tomatoes.

  • In a small bowl, whisk together Coco Earth liquid coconut oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper until emulsified.

  • In a large bowl, combine greens, Frisp Hearts of Palm, cucumber, cherry tomatoes, parsley, coriander, and mint.

  • Drizzle the herb lemon dressing over the salad and toss gently to coat. Sprinkle it with toasted nuts and feta (if using) before serving.
