Ingredients
- 1 ½ cups Coco Earth Coconut Flour
- ½ cup Coco Earth Ghee butter
- 2/3 cup sugar or equivalent sugar replacement
- 1 egg beaten
- 1 tsp vanilla extract
- ¼ tsp baking powder
- 1/8 tsp baking soda
- 1/3 cup melted chocolate
- ½ cup of chocolate chips
Instructions
- Preheat oven to 180°C. Line a baking pan with a parchment paper.
- Add Ghee butter and sugar/sugar replacements to the bowl of stand mixer. Beat for ~3-4 mins (until fluffy/light). Add egg, vanilla and mix properly. Add slightly cooled (not hot) melted chocolate, stir it well.
- Now mix the coconut flour, baking soda, baking powder and mix them well. Add this dry mix slowly to the stand mixer and stir until combined well. Add chocolate chips.
- Take 1 tbsp-sized portions out, roll them into balls, press them slightly and place them into the oven for ~10-12 minutes.
- Cool in the pan for sometime, then cool on wire rack.
