Ingredients
- 2 cups Coco Earth Organic Coconut Flour
- ½ cup sugar or equivalent sugar replacement sweetener
- 3 tsp baking powder
- ½ tsp salt, 1 cup milk
- ¼ cup Coco Earth Liquid Coconut Oil
- 1 egg beaten
- ½ cup chocolate chips(mini-size)
Instructions
- Preheat oven to 180°C. Line muffin tin with liners.
- In a bowl, combine flour, sugar/sugar replacement, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil, and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened.
- Fill cups 2/3rd full. Bake for 20 to 25 minutes or until a toothpick inserted in a muffin comes out clean.
- Cool 2 minutes before removing from pan.
- Serve warm.
