• 350 ml vegan coffee smoothie • 46g Coco Earth coconut flour (~6 tbsp) • 2 tsp instant coffee • 1-2 tbsp granulated sugar-free sweetener • 1.5 tsp gelatin (4.6 g) + 3 tbsp water Tip: If you don’t have this smoothie, just use any vegan coffee protein shake you have on hand! Topping • 50 g vanilla protein yoghurt (or vegan) • Sprinkle of cacao + grated chocolate Instructions 1. Bloom the gelatin by sprinkling it over 3 tbsp cold water. Let sit for 5 minutes until spongy, then melt in the microwave (about 20 seconds) or over a bowl of hot water. 2. In a bowl, blend all ingredients except the gelatin using an immersion blender until smooth. 3. Mix through the melted gelatin until fully combined. 4. Pour into a greased springform pan (mine is 11.7 cm). 5. Refrigerate until fully set and firm. 6. Remove from the pan and top with yoghurt, cacao, and grated.
