(makes 6) Date caramel blondie • 120g soft Medjool dates • 30g Organic Coco Earth coconut flour • 2 tbsp water or milk • Optional: pinch of salt Protein fudge layer • 30 g unflavoured collagen or 1 scoop whey • 60g almond butter • 1 tbsp vanilla monk fruit syrup or maple syrup + 1 tsp vanilla extract Instructions 1. Date layer: Mix chopped dates (soak if dry), coconut flour, water or milk, and salt using gloved hands until a soft, non-sticky dough forms. Roll into 6 balls (about 1 tbsp/ 27 g each), then press into silicone cups. 2. Protein layer: Mix collagen or whey with 1-2 tbsp syrup until smooth, then stir in almond butter until fully combined. Roll into 6 balls about ½ tbsp / 16 g) and press on top. Add granola if using. 3. Chill to set: 10-15 min in the freezer or 20-30 min in the fridge.
