If you want to give your everyday banana bread a healthier twist, adding Coco Earth Liquid Coconut Oil is an easy upgrade. It delivers a natural Piña Colada vibe while keeping the loaf deliciously moist and indulgent.

Below is the complete recipe to help you bake this delightful Piña Colada Banana Bread at home.

Ingredients

  • 2 ripe medium bananas, mashed

  • 1/4 cup  Coco Earth Liquid Coconut Oil

  • 1/4 cup plain Greek yoghurt

  • 2 large eggs, at room temperature

  • 1/2 cup raw sugar (or coconut sugar)

  • 1 tsp coconut extract

  • 1 tin (about 440g) pineapple chunks, plus all the juice (not syrup)

  • 2 cups plain flour

  • 1/4 tsp ginger powder

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/4 cup shredded coconut (unsweetened), plus more for the topping

Instructions

  •  Whisk together the mashed banana, melted coconut oil, Greek yoghurt, eggs, sugar and coconut extract. Add in the pineapple chunks plus juice.

  •  Fold in the flour, ginger powder, baking powder, baking soda, salt and shredded coconut until just combined.

  •  Pour batter into a greased and lined loaf tin. Bake for 50-60 mins at 170C/340F until a toothpick inserted into the middle comes out clean. The coconut topping will start to brown, so cover the loaf loosely with foil after about 10 mins.

  • Remove loaf and let cool completely. Slice, and enjoy! Feel free to top with a glaze or icing.
