Ingredients
• 1 medium apple (100g), chopped – skin left on for fibre
• 1 egg
• 100g low-fat cottage cheese
• 30g Coco Earth Oat Flour or finely blended oats
• 1 tbsp granulated sugar-free sweetener or preferred
• 1 tsp vanilla extract
• ½ tsp cinnamon (optional)
• ½ tsp baking powder (optional – for a slightly fluffier texture)
Topping
• ¼ cup vanilla or salted caramel yoghurt
Method
1. Preheat oven to 180°C and line or lightly grease a small baking dish (about 11–12 cm).
2. Add the chopped apple, egg, cottage cheese, oat flour, sweetener, vanilla extract and optional cinnamon to a blender, food processor or blend using an immersion blender.
3. Blend until smooth and creamy, then gently stir through the baking powder.
4. Transfer the batter to the prepared pan.
5. Bake for about 20 minutes, or until set and lightly golden.
6. Allow the cake to cool slightly, then top with yoghurt or your preferred toppings. Enjoy!
