Ingredients

100g apple

100g Greek yoghurt

1 large egg (60g)

2 tsp (5g) psyllium husks

20g frozen chopped cranberries, tossed with 1 tsp (3g) oat flour

1 tbsp granulated sweetener

1 tsp vanilla extract

2 tsp lemon zest
Protein Vanilla Sauce

20g vanilla whey protein
-
1½ tbsp water or milk
Instructions

Peel, core, and chop the apples.

In a blender or food processor, combine the chopped apple, Greek yoghurt , egg, oat flour, psyllium husk, sweetener, vanilla extract, and lemon zest. Blend until smooth.

Toss the cranberries in 1 tsp oat flour, then fold them into the batter.

Pour the batter into a lined ramekin (13 x 13 x 7 cm).

Bake in a preheated air fryer at 160°C for 25 minutes, or until set and lightly golden.Oven option: Bake at 180°C for 30–35 minutes, or until a toothpick comes out mostly clean.

Let the cake cool slightly. Meanwhile, mix 20g vanilla whey protein with 1½ tbsp water or milk until smooth and pourable.

You can enjoy the cake warm for a cozy treat, or chill for at least 1 hour (or overnight) to let it firm up into a soft, cheesecake-like texture.

Drizzle the protein sauce just before serving.
