Apple Protein Brownie

Ingredients

• 1 medium apple, chopped (120 g)

• 1 egg (60 g)

• 15 g cocoa

• 20 g Coco Earth Oat Flour

• 1 tbsp sugar-free granulated sweetener (or preferred)

Protein ganache

• 20 g chocolate whey protein

• 1 tbsp monk fruit chocolate syrup

Optional: sugar-free chocolate chips, to garnish

Instructions

  1. Preheat oven to 180°C.
  2. Add all brownie ingredients to a bowl and blend with an immersion blender until smooth.
  3. Pour into a lined 10 cm pan and tap gently to level.
  4. Bake for 20 minutes.
  5. Prepare the ganache: mix protein powder with chocolate syrup until smooth.
  6. Allow the brownie to cool, then top with ganache and chocolate chips.
