Ingredients
• 1 egg
• 1 tbsp cacao
• 1 tbsp Coco Earth Oat Flour
• 2 tbsp almond milk
• 1 tbsp sugar free sweetener or preferred
• 1 tsp baking powder
Coffee soak
• ½ tsp espresso powder or instant coffee
• 2 tbsp hot water
• 1 tbsp sugar-free sweetener
Topping
• ¼ cup vanilla yoghurt
• 1 tbsp unflavoured collagen (optional)
Garnish
• Dipped Freeze-dried Strawberry and Mango, you can use Frisp Chocolate Coated Strawberry crisps and Frisp Mango crisps
Instructions

1. Separate the egg yolk and white. 2. In a bowl, mix yolk with Coco Earth oat flour, cacao, milk + sweetener. 3. Whisk egg white until soft peaks form. 4. Add whisked egg white + baking powder to the batter and fold in gently. 5. Pour into a greased ramekin or mug. 6. Microwave 2 × 30-sec intervals (900W) = 1 minute total. 7. Coffee soak: while cake is hot poke few holes and pour coffee mix. 8. Flip cooled cake on plate 9. Topping: whisk yoghurt and collagen and top over cake .Garnish with Dipped Frisp Freeze-dried Strawberry and Mango. |
