Here are the ingredients and method to make healthy tasty creamy low carb Frisp okra curry:
Serves : 2-3 | Time : 45 minutes
Ingredients
- 1 tbsp of Coco Earth Liquid Coconut Oil
- 1 onion, finely sliced
- 250g Frisp okra, sliced (Available in Woolworths, Canned Veg section )
- 1 cup cooked or canned chickpeas
- 2 medium tomatoes, chopped
- 1–2 tsp curry powder
- 1 tsp cumin
- 1 tsp garam masala (or to taste)
- 1/2 tsp turmeric (optional)
- 1 cup coconut milk
- Salt and pepper, to taste
- 1 cup cooked quinoa and brown rice mix
- Fresh coriander/parsley, to serve
Instructions
- Heat oil in a large pan over medium heat.
- Add the onion and sauté until soft and lightly golden.
- Add Frisp okra, chickpeas and chopped tomatoes. Cook for another 2–3 minutes until the tomatoes soften.
- Sprinkle in the curry powder, cumin, garam masala, turmeric (if using), salt and pepper.
- Stir well so everything is coated in the spices. Pour in coconut milk and bring the curry to a gentle simmer.
- Let it cook for 8–10 minutes until the sauce thickens slightly and the flavours meld.
- Spoon the curry over a mix of cooked quinoa and brown rice. Sprinkle with fresh coriander or parsley before serving and enjoy right away.
