Below are the ingredients and method for baking healthy and delicious Vanilla Walnut Muffins using Coco Earth's Liquid Coconut Oil :

Ingredients
- 2 cups of self - raising flour (260g)
- 1/2 cup Coco Earth Liquid Coconut Premium Oil (125 ml)
- 1/2 cup chopped walnuts (60g)
- 2 eggs
- 1/2 cup granulated sugar (100g)
- 1/4 cup brown sugar, packed (55g)
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 cup of mashed banana (270g)
Method
1. Preheat oven to 180°C. Line a 12-hole muffin tin with paper liners.
2. Combine flour, salt, cinnamon and walnuts in a large bowl.
3. In a separate bowl whisk Coco Earth’s Liquid Coconut Premium Oil and eggs until
thick. Add brown and white sugar, vanilla extract and banana to egg mixture,
whisk well.
4. Pour wet ingredients into dry and fold until just combined. Scoop into lined tins
and bake for 18 – 20 minutes or until a skewer inserted into the centre of a muffin
comes out clean.
5. Remove from tin and cool completely on a rack.
TIP : Walnuts can be replaced with an equal quantity of other nuts or seeds.
