Easy Low-Cal Apple Slice Cake: Single-serve, high-protein & topped with a caramel glaze

Ingredients

• 1 large egg

• 1 tsp vanilla extract

• 100g 0.5% Greek yoghurt

• 100g apple, peeled & sliced

• 25g  Coco Earth Organic Coconut Flour

• 1 tsp baking powder

• 1 tbsp water

• ½ tsp cinnamon

• Pinch of salt

Instructions

1. Preheat oven to 180°C. Line and grease an 11.7 cm baking pan.

2. Peel and thinly slice the apples not paper-thin. Cut into halves or quarters so the pieces aren’t too large.

3. Whisk the egg, yoghurt (stir it in the container first so it’s not too liquidy) and vanilla extract until smooth.

4. Mix in Coco Earth organic coconut flour, cinnamon and salt until combined.

5. Add baking powder, pour over 1 tbsp water, let it fizz, then fold through.

6. Gently fold in apple slices.

7. Transfer to pan and bake for ~30 minutes, until golden and set.

8. Cool slightly, drizzle with caramel syrup
