Eggless Baked Yoghurt Chocolate Cheesecake

Ingredients

• 200g full-fat Greek yoghurt

• 100g ripe banana

• 20g  Coco Earth Organic Coconut Flour

• 1 tbsp cacao

• 1 tbsp granulated sugar-free sweetener or preferred

• 1 tsp vanilla extract

• Pinch of salt

Topping

Warmed raspberries mixed with sweetener

(or toppings of choice)

Instructions

1. Preheat oven to 180°C

2. Blend all ingredients until smooth and pour into a lined baking pan

4. Bake for 30 minutes, until set and no longer wet at the center

5. Cool then top with warmed raspberries

Optional: chill for a few hours or overnight for an even firmer, cheesecake-like texture, either way it’s so delicious
