Single-Serve Cranberry White Chocolate Protein Cake

Ingredients

• 1 egg

• 60g banana

• 30g cottage cheese

• 1 tbsp sugar-free vanilla syrup or maple syrup or regular

• 15g Coco Earth Organic Coconut Flour

• ½ tsp baking powder 

• 10g chopped dried cranberries (low sugar)

• 2 tsp lemon or orange zest

Frosting

• 50g vanilla yoghurt

• 10g vanilla vegan protein (optional)

White chocolate drizzle

• 10g sugar-free choc chips

• 1 tsp water

Garnish: extra cranberries

Instructions

1. Preheat the oven to 180°C.

2. Add banana, egg, cottage cheese, and syrup to a bowl. Blend with a stick blender until smooth.

3. Fold through Coco Earth organic coconut flour, baking powder, zest, and cranberries until combined.

4. Pour into a greased and lined pan (11.7 cm) and smooth the top.

5. Bake for 20 minutes, then cool completely in the pan.

6. Mix yoghurt and vegan protein until smooth and spread over the cooled cake.

7. Melt choc chips with water in the microwave (20 sec, 900W) and drizzle over the top. Finish with cranberries.

Variation

Single-Serve Soft Cranberry Coconut Slice

• Omit the banana and frosting

• Dust with icing sugar

• Bake 18 minutes
