Fluffy Chocolate Mug Cake

Never enough chocolate cake… Reading Fluffy Chocolate Mug Cake 1 minute Next Single-serve carrot cake

Ingredients

  • 1 egg

  • 1 tbsp cacao

  • 1 tbsp Coco Earth Oat Flour or vegan protein powder

  • 2 tbsp almond milk

  • 1 tbsp monk fruit baking sweetener or preferred fine granulated

  • 1 tsp baking powder

Quick chia jam (makes 2 serves)

  • 80g frozen raspberries (defrost + mash)

  • 1 tbsp chia seeds (10g)

  • 1 tbsp maple syrup

 

Method

  1. Separate the egg yolk and white.

  2. In a bowl, mix yolk with oat flour, cacao, milk + sweetener.

  3. Whisk egg white until soft peaks form.

  4. Add whisked egg white + baking powder to the batter and fold in gently.

  5. Pour into a greased ramekin or mug.

  6. Microwave 2 × 30-sec intervals (900W) = 1 minute total.

Quick raspberry chia jam:

  1. Add defrosted raspberries to a bowl and mash with a fork.

  2. Stir in chia seeds + maple syrup.

  3. Rest for 30 minutes to thicken.
