Ingredients

1 egg

1 tbsp cacao

1 tbsp Coco Earth Oat Flour or vegan protein powder

2 tbsp almond milk

1 tbsp monk fruit baking sweetener or preferred fine granulated

1 tsp baking powder
Quick chia jam (makes 2 serves)

80g frozen raspberries (defrost + mash)

1 tbsp chia seeds (10g)

1 tbsp maple syrup
Method

Separate the egg yolk and white.

In a bowl, mix yolk with oat flour, cacao, milk + sweetener.

Whisk egg white until soft peaks form.

Add whisked egg white + baking powder to the batter and fold in gently.

Pour into a greased ramekin or mug.

Microwave 2 × 30-sec intervals (900W) = 1 minute total.
Quick raspberry chia jam:

Add defrosted raspberries to a bowl and mash with a fork.

Stir in chia seeds + maple syrup.
-
Rest for 30 minutes to thicken.
